Frozen banana and mango blended with a splash of coconut milk until thick enough to eat with a spoon, topped with kiwi, banana, coconut and seeds.
Ingredients
For 2 servings
Smoothie
- 2 banana, ripe, sliced and frozen
- 60 ml coconut milk, unsweetened, or any milk
- 150 g frozen mango, diced
Toppings
- 1 banana, ripe, sliced
- 2 kiwi, peeled and sliced
- 3 tbsp shredded coconut, or coconut flakes
- 2 tbsp pumpkin seed
- 2 tsp chia seed
- 2 tsp hemp seed, or hemp hearts
Steps
Smoothie
- Slice two of the bananas and freeze them in a bag for at least a few hours, or overnight.
- Put the frozen banana and coconut milk in a food processor or high-speed blender and pulse or blend until creamy.
- Add the frozen mango and blend again, stopping to scrape down the sides as needed, until smooth and as thick as soft-serve. Scrape rather than adding more milk: the frozen fruit is what makes it thick enough to eat with a spoon.
Toppings
- Spoon into two shallow bowls and top with the fresh banana slices, kiwi, coconut, pumpkin seeds, chia and hemp seeds. Eat straight away, while it still holds its shape.
