Frozen banana blended with peanut butter, oat milk, chia and vanilla into a thick, milkshake-like smoothie that drinks like a meal.
Ingredients
For 2 servings
- 2 banana, ripe, peeled, cut into chunks and frozen
- 4 tbsp peanut butter, natural
- 240 ml oat milk, or any milk
- 2 tbsp chia seed, or ground flaxseed
- 1 tsp vanilla extract
- 1 tbsp maple syrup, to taste (optional)
Steps
- Freeze the banana chunks in a bag for at least 4 hours, or overnight. Frozen banana is what makes it thick and cold like a milkshake; fresh works, but the smoothie comes out thinner.
- Put the oat milk, frozen banana, peanut butter, chia and vanilla in a high-speed blender and blend on high for about 60 seconds, until completely smooth, with no flecks of chia left.
- If the blades stall, add a little more milk, 1 tbsp at a time. Too much liquid is what turns it runny.
- For a thicker, slushier texture, add a small handful of ice and blend again until no chunks remain. Go easy: too much ice dilutes the flavor.
- Taste, and add another spoonful of peanut butter, or the maple syrup if you'd like it sweeter. Pour into two glasses and drink straight away.
