Rolled oats and chia soaked overnight in oat milk until thick and creamy, with fresh blueberries stirred through in the morning and piled on top.
Ingredients
For 2 servings
- 60 g rolled oat, old-fashioned, not quick-cook
- 2 tsp chia seed
- 200 ml oat milk, unsweetened, or any milk
- 1 tbsp maple syrup
- 50 g blueberry, fresh
Steps
- Stir the oats, chia seeds, oat milk and maple syrup together in a medium bowl until evenly combined, with no dry oats left floating on top.
- Cover and refrigerate overnight, until the oats have softened and the chia has thickened the milk to a creamy, spoonable mix.
- In the morning, stir in most of the blueberries, keeping a small handful back, and divide between two jars or bowls. Scatter the rest over the top.
- Eat cold, or warm it in the microwave for 30 to 45 seconds. Covered, the oats keep in the fridge for up to 5 days; add the blueberries on the day you eat them. If you use frozen berries, thaw them and add them at serving, since stirred in overnight they turn the oats purple.
