Quick · 20 min · Serves 4 · Mexican · by norinori
A quick and satisfying taco bowl that delivers all the flavors of taco night without the tortillas. Seasoned ground beef is served over a bed of crisp butter lettuce and topped with fresh tomatoes, creamy avocado, shredded Mexican cheese, and a dollop of sour cream. Perfect for busy weeknights, meal prep, or a lighter take on classic tacos.
Ingredients
For 4 servings
- 2 tomato
- 1 pounds ground beef
- 1 onion
- 1 butter lettus
- 1 taco seasoning
- 1 mexican cheese
- 1 sour cream (optional)
- 1 avocado
- 6 tbsp olive oil
Steps
- Prepare the ingredients: Dice the onions. Dice the tomatoes.
- Cook the onions: Drizzle olive oil in a pan and heat over medium-high heat. Cook the diced onions until they're slightly translucent.
- Cook the Beef: Shift the onions to a side of the pan and drizzle olive oil. Add the ground beef. Cook for ~6 minutes, breaking up the meat with a spoon, until the beef is browned and the onion is softened.
- Season: Drain excess fat. Add the taco seasoning and the amount of water called for on the seasoning packet (typically ¼–½ cup). Stir well and simmer for 2–3 minutes until the sauce thickens.
- Prepare the Toppings: While the beef cooks: Chop the butter lettuce. Slice or dice the avocado. Shred cheese if using a block. (Tomatoes can be added to the beef and the onions to cook after seasoning or added as topping later.)
- Build the Bowls: Divide the butter lettuce between four bowls. Top with the seasoned taco beef.
- Add Toppings: Scatter the tomatoes, avocado, and Mexican cheese over each bowl. Add a spoonful of sour cream if desired.
- Serve: Serve immediately while the beef is warm and the vegetables are crisp.
