Crisp toasted sourdough spread with lemony smashed avocado and finished with flaky sea salt and a pinch of chili flakes.
Ingredients
For 1 serving
- 2 slice sourdough bread, thickly sliced
- 1 avocado, ripe, yielding to gentle pressure
- 0.5 lemon, juiced
- 1 tsp olive oil, extra-virgin
- 1 pinch chili flake (optional)
- 1 pinch flaky salt
Steps
- Toast the sourdough in a toaster or under a hot broiler, turning once, for 2 to 4 minutes, until deeply golden and firm enough not to bend when you hold a slice by one edge. Soft toast turns soggy under the avocado.
- Meanwhile, halve the avocado around the pit, twist the halves apart and lift out the pit. Scoop the flesh into a small bowl with a large spoon.
- Add the lemon juice and a pinch of salt (about ⅛ teaspoon) and mash with a fork until as chunky or smooth as you like. Taste, and add a little more salt if it tastes flat.
- Pile the avocado onto the hot toast and spread it right to the edges with the back of the fork.
- Drizzle with the olive oil and finish with the flaky salt and the chili flakes, if using.
- Eat straight away, while the toast is still crunchy.
